Brief description of study

Are you 60-85 years of age, in overall good health, and live in the Bloomington, IN area? 
 
Researchers at the IU School of Public Health are looking for older adults to take part in a study looking at how a beef-based diet vs. a vegetarian diet affects muscle fatigue.
 
All study foods and meals will be provided at no cost to you.
 
Your participation may help other older individuals to make more informed meal choices that can impact their quality of life.

Who is eligible to participate?
  • Ages 60-85 years (confirmed by birth date listed in participant’s identification at screening visit)
  • Able to eat study diet meals for a total of 16 weeks (no dietary restrictions that prevent to consumption of beef, soy and/or wheat)
  • Living in or near the Bloomington, IN area and willing to travel to the IU Bloomington campus for study visits (within 25 miles)
*Additional criteria must be met in order to qualify. Study personnel will determine individual eligibility at screening visit,

Detailed description of study

What is involved if I participate?
1) Attend a screening visit to see if you qualify (includes diet, fatigue and health questionnaires and measurements of height, weight, and blood pressure).
 
2) If you are eligible and choose to participate, you will be randomly assigned, like the flip of a coin, to either a) beef diet group or b) vegetarian diet group. 

Study participation involves the following:
  • You will be provided with breakfast, lunch, and dinner meals 7 days per week for two 8-week diet intervention periods (meals will be provided at the IU School of Public Health - 1025 E 7th St.)
  • After a 2-week break, the participants that started on the beef diet will cross over to consume the vegetarian diet for 8-weeks and the participants that started on the vegetarian diet will cross over to consume the beef diet for 8-weeks.
  • Attend 6 study visits that will include the following: body composition measures, muscle fatigue assessments, sit-to-stand chair tests, 6-minute walking tests, Dual-Energy X-Ray scans and blood samples will be collected.
Will I be compensated?
  • Participants will receive up to $230 for completing all of the study requirements.
  • Participants will be provided with all foods and meals at no cost
  • Participants will be provided with parking on the IU Bloomington campus at the School of Public Health

Eligibility of study

You may be eligible for this study if you meet the following criteria:

  • Conditions: Healthy
  • Age: Between 60 Years - 85 Years
  • Gender: All

Inclusion Criteria:

  • English-speaking and able to consent to study activities
  • Able to move without significant limitations (perform sit-to-stand chair and 6-minute walking tests)
  • Willing to provide blood samples
  • Currently living in or near the Bloomington, IN area and willing to travel to the IU Bloomington campus for study visits (within 25 miles)
  • Able to obtain physician’s clearance for study participation (required prior to baseline testing)
Exclusion criteria:
  • Diagnosis of progressive neurological disorders, musculoskeletal disorders, osteoarthritis, rheumatoid arthritis, severe cardiovascular disease, kidney disease or liver disease
