Brief description of study
What is this study about?
The purpose of this study is to find out more about how the consumption of strawberry improves immune health and iron (a nutrient in the food we eat) status. This study compares effects of consuming strawberry powder (low vs high dose) on changes on markers of immune health(inflammation) and iron status, which will help us learn if consuming strawberry reduces inflammatory response and improve the level of iron in the body.
Detailed description of study
What will happen during study participation?
1) This study involves completing an online screening form to see if you may be eligible.
2) If you are eligible and choose to participate, you will be asked to attend 16 visits to the study site which include: 1 pre-study/informational session, 1 screening blood draw, 4 study visits where you will consume strawberry drinks, and another 4 visits where you will consume strawberry drinks and have your blood drawn by a phlebotomist.
- You will be required to fast overnight before study visits and will be asked to drink about 6 to 9 cups of water within 12 hours before the visits—for visits involving blood draws.
- Our IU School of Public Health Metabolic Research kitchen staff will prepare all strawberry drinks to ensure consistency, and drinks will be consumed at the research dining tables. Participants will return to the study site for strawberry drinks while participating in the study.
- The total duration for participation in this study is 4 weeks.
Incentive/compensation
- Participants will receive monetary compensation up to $160 upon completion of the study.
- Participants will also be provided with a personalized comprehensive blood chemistry report within three months after their blood samples are collected.

Eligibility of study
You may be eligible for this study if you meet the following criteria:
- Conditions: healthy

Age: Between 18 Years - 44 Years

Gender: Female
Inclusion Criteria:
- BMI: 30-40 kg/m2
- Willing to give blood
- Willing to travel to multiple study visits in Bloomington, IN and consume a strawberry drink
Exclusion Criteria:
- History of chronic gastrointestinal disorders/diseases
- Allergic to berry products
- Currently taking iron supplement or antibiotics
- Currently taking probiotics/prebiotics, antioxidants, or dietary fiber supplements
- Currently smoking or vaping
Additional screening will be required for eligibility and exclusion.
